Whole Wheat Biscuits & Turkey Sausage Gravy

The holidays are always a stressful time, especially for the ladies.  I know that I would like to thank the special someone in my life more than I do, so making an unexpected breakfast is a nice way to show you care.  A man that bakes gets himself triple top secret bonus points!  Here is a great intro into that world.  A lot of the scaling (measuring) and prep work can be done the night before.  It's a great way to decompress.... pour yourself a big cup of coffee {or beer}, put on some tunes and get your bake on.

Whole Wheat Biscuits


All Purpose Flour – 1 cup

Hungarian Wheat Flour – 1 cup

Baking Soda – ¼ teaspoon

California Sea Salt – 1 teaspoon (or sea salt of your choice)

Cold Butter, cubed – 6 tablespoons (I prefer salted butter)

Buttermilk – 1 cup



Preheat oven to 450 degrees. [425 degrees on Convection Bake if you have a Bosch oven]

In the bowl of a food processor add the flours, baking soda and salt.  Pulse.

Add the cubed butter.  Pulse to combine.

Add buttermilk.  Pulse to combine.  Do not over mix.

Knead dough briefly.  Dough should be just combined and may be lumpy.

Knead and Roll dough to ½ inch thickness.

Cut out biscuits using a ring mold or a thin rimmed glass
works perfectly fine.

Place on greased baking sheet.

Brush with buttermilk.

Bake 6 minutes and rotate.  Bake 6 more minutes.

Turkey Sausage & Wine Gravy


Minced Red Onion – ½ cup

AP Flour – 1 cup

Butter – 1 cup

Turkey Sausage – 1 lb

White Wine – 1 cup

Milk – 3 ½ cups


Brown the sausage in a hot dutch oven.

Add the onions and cook until translucent.

Add the butter and stir to combine.

Add the flour and stir to coat.  Let the flour cook for 3 minutes.

Add the wine to deglaze the pan.

Add the milk while stirring.

Let the gravy simmer on low to thicken, stirring often about twenty minutes.   Spoon gravy over biscuits {very carefully} and deliver to your special someone.
