Apple Oatmeal Muffins

This recipe was the result of a woman harriedly trying to come up with something to feed her child(ren) as quickly as possible this morning and ending up scoring bigtime in the flavor department!   Thank goodness for this one little apple, as it was the sole source of fruit in my kitchen, and therefore, the quick inspiration for the muffins.  This is a small recipe, but perfectly and precisely enough for 6 regular-sized muffins to feed your family for breakfast.  I recommend not making more of these babies (unless of course you have a big family) or you will end up eating them ALL and your idea of having a healthy little muffin for breakfast will fly right out the kitchen window!

At first I was worried these might turn out dry as I didn't add in any milk, buttermilk or sour cream, but the apples did a fine job of making them incredibly moist.  I almost felt like I was eating a slice of decadent apple spice cake instead of a whole wheat oatmeal muffin!


1/4 cup butter, softened
1/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
1/2 cup whole wheat flour
1/4 teaspoon baking soda
1/2 cup oats
1 small apple, peeled and grated
1 teaspoon cinnamon


Preheat oven to Convection Bake setting at 325 degrees.  *Bake at 350 if your oven does not have that feature.*



In a medium bowl, peel and grate apple; set aside.



In a stand mixer with the whisk attachment [or a medium bowl with your hand mixer], beat together butter and sugar for about 1 minute.



Add in egg and vanilla and mix until combined, scraping down sides if necessary.  Add in flour and baking soda and mix until combined.



Next, add in oatmeal [I used old-fashioned because it is what I had, but quick-cooking will work just as well], grated apple and cinnamon.



Mix until well combined.  Line a cupcake/muffin pan with paper liners and fill 3/4 way full with batter.



Bake for about 20 minutes, until centers no longer look wet.



Remove from oven and enjoy a moist, delicious, not healthy tasting muffin {or three}.
