{Copycat} Honeybaked Ham Salad

Did you know that Honeybaked Ham has ham salad?  It's not typically found on the menu, but if you ask for it, they've got dandy little containers of it stocked away in their refrigerators.  Anytime my husband knows I will be in the general vicinity of HH, he has me stop in to get a container {or two} of this fabulous delicacy.

Ham salad blows tuna salad and chicken salad out of the water and I hate saying that because I love me some good tuna or chicken salad.  The ham version has a rich, salty, pickle-y flavor that once you have it--you craaaaave it!

Sadly, the location closest to our house closed recently which has meant no ham salad.  I decided to make an attempt to re-create the deliciousness we've been missing with our holiday leftovers and once I got to it, couldn't believe how quick and easy it was to put together.

I had a good amount of ham left over--about three cups--which is what I based my recipe on, but in the event you don't have as much, the recipe breaks down easily to match what you do have.  Basically it is 1/3 cup of mayo, 1 stalk of celery and 1 generous tablespoon of hot dog relish to each cup of ham.  Easy, right??   You won't believe how delicious it is either!

If you still have more ham to work with, this Ham & English Pea Risotto is a great way to use up those leftovers!





3 cups ham
1 cup mayonnaise
3 stalks of celery, finely chopped
4 tablespoons hot dog relish


Put leftover ham into a food processor and pulse until ham is broken down--about 8-10 pulses.

Mix ham, finely chopped celery, relish and mayonnaise in a large bowl.

Put ham salad in the refrigerator until ready to serve.   These sandwiches would be perfect for a baby shower or game day spread.
