Green Goddess Dressing

We have family dinner at my in-laws every Sunday evening.  Its a tradition my husband's family has had for years and a great opportunity for the family to connect and see the grandkids each week.  For the most part, my MIL does all of the food prep...she's got everyone's specific taste buds down pat and knows what will fly with Grandpa and what won't.  That usually means that I don't bring much over to contribute to dinner, but whenever she does ask me if I mind bringing something, I've got to be sure its GOOD!!!

My CSA basket this week was full of fresh herbs, lettuce and avocado so I knew a salad would be in order.  A salad with Green. Goddess. Dressing.  If you haven't had green goddess before, you simply MUST try it!   It's packed full of fresh herbs and a bit of avocado mixed in makes it ultra silky and creamy.   To amp up the creaminess even more, I decided to add in a little bit of greek yogurt.   Holy was fabulous.  My sister-in-law and I were dipping Goldfish into it before dinner and could hardly stop ourselves to save some for the actual salad!   Here's how I made it.....


1 small shallot
2 tablespoons fresh basil
2 tablespoons fresh mint
3 green onions, green stems only
1/3 cup olive oil
2 tablespoons red {or white} wine vinegar
1 teaspoon lemon juice
salt and pepper, to taste
1/2 avocado {you can use the other half in any salad you may be dressing}
1/3 cup low fat greek yogurt


In a small food processor, combine shallot, green onions, basil, mint, olive oil and vinegar.  Blend for about 30 seconds until herbs are broken down.  Spoon in avocado, greek yogurt, salt and pepper and blend again until well incorporated.   Store in the refrigerator until ready to use.

I served this dressing over a red leaf salad with roasted beets, cucumber, avocado and pine nuts.  It was awesome.  I'm pretty sure it'll be invited back....
